Day One Done

A much needed beverage
It is great relief (and utter exhaustion) that I can say I single-handedly produced, from scratch, a couple hundred cod fish cakes and a couple hundred zucchini fritters. The monotony of working a breading assembly line for HOURS allows the mind to drift to some strange and dark places. Half way through the day, I took a break and checked out Brad Long's cafe down the hall from the Toronto Underground Market kitchens. I enjoyed a pint of Muskoka lager and some very good french fries. I couldn't help but notice that they were triple-cooked fries - crunchy with a glass-like crust on them. I hope I can get the same effect at the market on Sunday.
